Inspector's notes

Cauliflower roasted in the oven was heated to internal temperature of 112 degrees Fahrenheit before placing in a steam well to be held hot. All plant foods cooked for hot holding must be cooked to 135°F. Person in charge (PIC) cooked cauliflower to 135F and returned container to steam well during inspection to correct - inspector verified temperature. Corrective Action: Corrected at time of inspection.
