Observed sliced tomatoes, shredded chicken, cut lettuce, holding 49-60*f degrees on auxiliary make table open top. Items were prepared an hour and a half prior, items moved to walk-in to cool to 41*f degrees at time of inspection. when preparing items that come up in temperature from prep and then hold, not cool items in a prep table. Walk-in fridge is the only appropriate location to cool foods. Corrective Action: Corrected at time of inspection.
