Per the employees, the vacuum sealed meat in the freezer is for employees only and not for serving to the public. Discussed the variance requirements for reduced oxygen packaging and requested that the smart sealer and vacuum sealed products are removed from the premises prior to next routine inspection and to contact inspector for information on how to apply for a variance if the establishment would like to integrate ROP to their food processes. Observed gyro meat on spit with an internal temperature of 68*f and flame was turned off. According person in charge (PIC) gyro meat is from frozen and raw, when establishment is slow and the hot wells filled with gyro meat are full, the burner is turned off. Discussed keeping flame on low to ensure a continuous cooking process. and finishing the cook step at 155*f degrees before cook and serve. PIC turned on heat at time of inspection.
