Main walk in unit is 47.1*F-48.2*F with min/max thermometer. Inside main walk in unit had: variety of cheese 44*F-48*F; cut tomatoes at 47*F; cut lettuce at 48*F-50*F. Notified Person In Charge (PIC). PIC confirmed all temperatures. Per PIC the unit was 38*F this morning. Opened freezer door to unit. All foods internal temperature went down to 41*F. Observed at upright refrigeration unit with display of 49*F. Min/max confirmed 49*F ambient. Internal temperature of milks; cream cheese and salads was 49*F-51*F. Directed PIC to move all tcs foods in unit to main walk in to cool to 41*F. Verified after 30 minutes. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.

PIC placed work order for unit. =======Main walk in unit ambient needs to be at 41*F to maintain tcs foods at 41*F. Corrective Action: Correct prior to next routine inspection. 3-501.15 (A) - Priority Foundation: Cooling Methods. Observed full tray of hot holding spicy chicken nuggets in temperature danger zone (41*F-135*F). Internal temperature of the spicy nuggets was 109*F-127*F with inspector and establishment thermometers. Notified Person In Charge (PIC). PIC voluntarily discarded improperly hot holding chicken nuggets. Upon review of area it was observed two hot bulbs above spicy chicken nuggets were burnt out. ==== Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. Corrective Action: Corrected at time of inspection.

Observed establishment using tilt time as control for cut lettuce; cut tomatoes; and American Cheese slices. At time of inspection no times were observed on containers. Unit is at 47*F. Notified Person In Charge (PIC). Per employee the food was placed 1 hr prior to inspection start time. Directed PIC to put on containers appropriate start and discard times. =======If utilizing 4 hours and no temperature control: The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control Corrective Action: Corrected at time of inspection.
