Observed ham 51*F, turkey 44*F, chicken 48*F, shredded cheese 52*F, roast beef 50*F, cooked egg 45*F in cold table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, temperatures were taken of the TCS product within the previous 4 hours and TCS food items were 41*F or below. Instructed PIC to move TCS food items to the walk-in cooler to rapidly cool at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed wares being sanitized in the 3-compartment sink in a solution of sanitizer that measured over 400 ppm quaternary ammonia on quaternary ammonia test strips. Manufacturer instructions on container of sanitizer stated that proper concentration should be 150-400 ppm quaternary ammonia. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Ensure sanitizer is diluted to proper levels, as measured on quaternary ammonia test strips, until chemical dispenser is fixed. PIC started servicing chemical dispenser during time of inspection. Corrective Action: Corrected at time of inspection.

Observed that the reheated meatballs in the hot holding unit had temperatures ranging from 97F to 115F. Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 135°F or higher. Per the PIC, the meatballs are to be heated in the microwave to 165F before placing in the steam table for hot holding. The PIC stated the meatballs had been reheated in the last 30 minutes and were returned to the microwave and properly reheated to 165F. The temperature was rechecked at 151F.
