Observed no handwashing soap at either of the handwashing sinks in the front or back of establishment at the time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC used dish soap from the three compartment sink until handwashing soap could be supplied. PIC went to the store to pick up soap to provide soap for both handwash sinks at time of inspection. Observed multiple containers of hot dogs 44*F-46*F and soft cheeses 46*F-49*F located in the top part of the cold table at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS foods were located in the bottom portion of the cold table and maintained 41*F within the previous 4 hours. Instructed PIC to locate TCS foods in the reach in refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Provide opening in the cabinet where the ice machine drains to the floor sink. Currently a contained area is at the floor drain area2. Provide 1 inch air gap to the floor sink flood lip, ie mopsink area3. Ensure 110^F hot water to all sinks, 100^F at tempered handwash stations within 45 seconds4. Provide faucet that provides 1 inch air gap and no sprayer hanging below the flood lip5. Provide reducing coupler for the reduced pressure zone backflow preventer 6. Seal the floor where patch work was done7. Seal ceiling above the hot water tank8. Seal all cracks, crevices and penetrations, such as inside the cabinets, under the cove base, area in the soda box area, laminate used to elevate the solid countertop, around the front dump station9.
