Cut lettuce items, cut tomatoes, and coleslaw with set times on the make lines from 12- 6PM. The PIC corrected the set discard times to 4 hours. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ====Observed 4 door victory glass reach in unit with ambient temperature of 48*F with min/max thermometer. Inside internal temperatures of cut lettuce was at 46*F-50*F; shredded American Cheese at 46*F-48*F; Cheesecake at 50*F. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Per PIC all food items were placed into the unit 2 hours prior to inspection start. PIC moved all tcs items listed to main walk in to cool to 41*F. Verified cooled down within 30 minutes. Inside another 4 door reach in unit on main cook line with ambient temperature of 44.6*F; inside shrimp pizza was at 46*F; cooked lobster at 48*F.
