Employees should wash their hands and change gloves after handling raw meats/seafood prior to changing tasks to prevent cross-contamination. Hands must be washed at any time contamination occurs. Arrived at restaurant for temperature reinspection of middle walk-in refrigerator. Ambient temperature of middle walk-in refrigerator is 44 degrees F using min/max thermometer. Person in charge (PIC) stated a refrigeration technician inspected the walk-in refrigerator on 19 July 2023 and refilled system with refrigerant. Per PIC, kitchen is experiencing issues with air conditioning (AC) and awaiting AC parts. Additionally, PIC stated the refrigeration technician said there is not much more that can be done. Recommended to PIC getting a second technician opinion. Kitchen has an additional smaller walk-in refrigerator which time/temperature control for safety (TCS) foods are being stored. Smaller walk-in refrigerator is holding foods below 41 degrees F. PIC stated they are using the middle walk-in refrigerator only for non-TCS foods until the refrigerator is holding foods below 41 degrees F.Additionally, staff is using an ice baths in refrigerated drawers on main cook line to keep foods below 41 degrees F. Will contact restaurant in a few days to inquire about temperature status of middle walk-in refrigerator.No County legal action will result from this inspection.Emailed report.
