Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils --- Observed heavy accumulation of brown organic matter and residue along upper inside walls of ice machine. Ice makers, and ice bins shall be cleaned on a routine basis to prevent the development of slime, mold, or soil residues that may contribute to an accumulation of microorganisms. Staff states ice machine was serviced 2 weeks prior and PIC stated it is being debated whether the machine should be replaced. Suggested PIC to have it deep cleaned at a more frequent interval.
