Observed in three separate units cold holding tcs foods in temperature danger zone (41*F-135*F). Observed inside true two door unit with ambient of 53.7*F with min/max thermometer. Following observed: butter at 51*F; cream cheese at 52*F; mozzarella string cheese at 53F. Inside two door sandwich reach in unit: cut ham at 47*F; cooked corn at 50*F; cut tomatoes at 46*F; cut lettuces 44*F-48*F. In low 4 drawer unit below grill station at 50*F ambient with min/max. Following foods tcs: cut cheeses at 50*F; shredded American Cheese at 50*F; cut spinach at 53*F. Notified Person In Charge (PIC). PIC confirmed all internal temperatures. Establishment is taking daily temperature logs at 3 intervals daily. Last one was at 6am. Directed PIC to place all foods into blast chiller to cool to 41*F. ======== Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Observed inside main walk in unit with cooked cooling chicken soup with sealed lid on top. Internal temperature was at 46*F. Notified Person In Charge (PIC). Per PIC soup was recently prepared. Also observed inside same unit sealed speed rack with 20 layers of cooling foods: potatoes; sausages; raw bacon at 45*F-47*F). Per PIC the product was placed open and prepared 2 hrs prior to inspection start time. Also observed inside two door refrigerator with ambient at 53.7*F with over 20 grab and go cold sandwiches at 50*F. Per PIC sandwiches prepared 1 hr prior to inspection start time. Directed PIC to have employees move grab and go to main walk in unit to cool to 41*F. ====Improper method used. Corrective Action: Corrected at time of inspection.
