Inspector's notes
Observed two containers of sliced tomatoes, a container of bacon jam and a container of bacon aioli with internal temperatures as measured using a probe thermometer of 51°F - 52°F at a prep unit on the main cooking line. According to the person in charge, the foods had been placed on the line from the walk-in cooler the morning of the inspection and had been in the unit for just under 2 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. The person in charge reached out to a technician to come service the unit. The establishment has sufficient cold holding capacity to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
