Inspector's notes
Observed cooked chicken and vegetable soup with internal temperature of 90F in the walk in cooler. The soup was in a deep plastic 22qt container with a sealed tigh fitting lid and on the bottom most shelf of the walk in. The person in charge stated the soup had been placed into the walk in for cooling at 1pm, more than 2 hrs ago. The chicken soup was embargoed at the time of inspection. Discussed cooling methods to maximuze heat transfer and cooling times and temperatures. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed toilet tank lid too small to cover the toilet tank leaving gaps that were covered with wet cardboard from water splash of the toilet tank. Obtain proper fitting toilet tank lid, fixtures must be nonabsorbent smooth and easily cleanable. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-7-201.11, P: Separation-Storage Observed WD-40 spray can and a bottle with blue liquid cleaner stored on a shelf above open bulk bags of flour. The person in charge removed the spray can and bottle and stored them away form the food storage area. Discussed storage separation to prevent contamination of food. Core-3-304.14, C: Wiping Cloths, Use Limitation Observed a sanitizer bucket with less than 25ppm chlorine sanitizer solution. The person in charge disposed of the sanitizer solution and made a new sanitizer solution with a 50-100ppm chlorine sanitizer solution. Observed a wet wiping cloth kept outside the sanitizer solution bucket in between use. Wet wiping clothes must be stored inside sanitizer solution between use.
