Observed chicken breast removed from the grill the PIC stated was fully cooked with an internal temperature in the thickest part at 138*F and 140*F in each breast. PIC replaced the chicken on the grill to continue cooking until a final cook temp of 165*F was achieved. All raw animal proteins must reach a final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

In the cold table across from the fryer, observed a container of red salsa and a container of green salsa with an internal temperature range of 45-50 degrees F. Chef stated items had been in cold table since 11:30 AM. In the left cold table next to the cook top, observed shredded cheese, cut cabbage, pico, raw chicken, cooked onions, and raw beef with internal probed temperature range of 60-67 degrees F. Chef stated items had been in unit overnight. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed a metal container of black beans in the cold top with a probed temperature of 54 degrees F. Observed cooked peppers and onions in the drawer under the cook top with a probed temperature of 49 degrees F. Person in charge stated both items were prepared that morning within the last couple hours. Person in charge relocated both items to the walk-in to cool properly to 41 degrees prior to transferring to the cold top. Observed large metal pan and a large plastic container with cooked beans inside the walk in. Person in charge stated the items had been placed in the walk-in to cool at 1pm. At 2:50pm beans had an internal probed temperature range of 108 - 118 degrees F. Advised person in charge for proper cooling, must be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. Person in charge placed items back on stove to reheat to 165 degrees F. Corrective Action: Corrected at time of inspection.
