Inspector's notes

In the mechanical dishwasher which was not in-use at the time of inspection, observed the maximum utensil surface temperature not achieving 160F after several runs. The wash and rinse thermometers and water pressure gauge were not showing proper readings as well. Repair as needed. Until repaired, staff will use the available three compartment sink or send wares to another kitchen for cleaning/sanitizing. Corrective Action: Correct prior to next routine inspection.
