Observed spring mix, carrot salad, diced chicken, and cream-based salad dressings, double panned, on refrigerated salad bar in dining area with an internal temperature of 47-52*F. Person in charge stated foods were prepped within one hour of inspection and was actively cooling. Foods should be actively cooled in units designed to cool. Salad bar is designed for cold holding only. Person in charge had employee wheel foods into freezer to quick cool to 41*F and below before service. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Observed area drain near grease trap with standing water, exceeding 1.5 feet in diameter onto floor in dish room area. All drains and plumbing must maintain good repair and proper function. Person in charge had maintenance actively working on drain during inspection and was able to alleviate clog. 5-205.15 (B) - Core: System Maintained in Good Repair; Maintained Predefined Comment: All plumbing must be maintained in good repair at all times.
