Observed a medium 6 inch metal pan of au jus and large hermetically sealed bag of cheese sauces with an internal temperature ranging 123-130*F. Person in charge stated sauces were placed in unit within 3 hours of inspection, and reheated to 165*F before placing back in hot holding unit. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Person in charge adjusted dial and units able to reach an ambient temperature of 135-145*F. 4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Predefined Comment: All equipment must be maintained in good repair at all times.
