Cheese sauce with an internal temperature of 64 degrees F holding in a pump warmer next to the prep table in the kitchen. Spoke with PIC and they stated that the cheese sauce was heated to 165 degrees F and then transferred to the pump warmer to hot hold at 135 degrees F. Cheese was removed from cold holding and reheated at 9am, approximately 1.5 hours before inspectors arrival. PIC directed kitchen associate to reheat the cheese sauce to 165 degrees F and move to pump warmer. Ensure food is reheated to 165 degrees F within two hours once removed from cold holding at 41 degrees F. Correct By: Corrected At Time Of Inspection
