Observed the Smoked Cheddar and the Coby Jack cheese cold holding very front of case at internal temperature of 45-47 deg F. PIC informed the cheese had been placed in display case a short time prior this cheese was placed in lower portion of case for rapid cooling. Corrective Action: Corrected at time of inspection.
