Observed broken package of meat in open-air cooler and package contents having leaked from bag. All food-contact surfaces must be cleaned to sight and touch and be free from potential sources of contamination. Employee cleaned and sanitized the unit and outer packaging of the other products that had been visibly contaminated, and the broken package was taken to be discarded. Corrective Action: Corrected at time of inspection.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils Observed auto wrapper machine with visible meat debris on bottom inside conveyor chains and bearings. PIC stated inside is wiped down periodically and gets cleaned maybe once a month when the company services machine. Clean and clean at a frequency to preclude accumulation of food debris to prevent growth and spread of pathogens. Also observed broken safety door of table meat saw cutter in backroom. Replace to prevent growth of pathogens and potential foreign object contamination of meat. Correct By: Correct Prior To Next Routine Inspection
Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed metal plate on inside of meat cooler door leading into receiving back room to be detached from door. Re-attach plate to door so that area is smooth, easily cleanable, and prevents seepage of liquid. Observed tile baseboard in meat backroom to be in disrepair with spacing in caulking of baseboard that could lead to pooling of liquid. PIC stated a remodel is scheduled to take place in January 2024 to re-tile area. Repair areas and maintain in good repair. Correct By: Correct Prior To Next Routine Inspection
