Observed spatulas next to grill in sanitizing solution of 200 ppm quat sanitizer. Between uses, utensils cannot be left: sitting on a cloth, sitting in water that is not either running or at 135 °F or hotter, in a sanitizing solution, or hung on exhaust hood frame or equipment handles. Utensils were replaced and sanitizer bucket was emptied at time of inspection. Corrective Action: Corrected at time of inspection.

If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. #22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food items with internal temperature between 48F - 51F in the prep cooler by the cook top. The person in charge stated some food items had been restocked less than 4 hours ago and others had been in the prep cooler for more than 4 hours. TCS food items that had been stored in the prep cooler for more than 4 hours were embargoed at the time of inspection and included liquid shelled eggs, liquid egg whites, chorizo, sausage, turkey sausage, and ham. All other TCS items that had been restocked into the prep cooler less than 4 hours ago were moved to alternate cold holding equipment for rapid cooling.

Inspector's notes

Observed prep cooler with minimum ambient temperature of 52F. TCS foods stored inside the prep cooler had interal temperatures of 48F -51F. The person in charge temperature checks of the prep cooler were recorded around 8am and provided temperature check logs that showed internal temperatures of less than 40F for the TCS foods stored in the prep cooler. The person in charge removed all TCS foods from the prep cooler and placed a work order for service. Establishment has additional sufficient cold holding equipment to maintain cooling/cold holding capacities.
