Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Establishment will relocate TCS flavors to functioning machines until repairs can be made. Corrective Action: Corrected at time of inspection.

Discussed moving TCS flavors to functional machines and non-TCS flavors to other machines with person in charge. Must repair machines such that they maintain TCS foods at 41° F or less prior to 24-hour reinspection. Corrective Action: Correct within 24 hours.

All TCS foods improperly cold held were discarded by person in charge at time of inspection. Person in charge discontinued use of frozen yogurt dispenser until machine can be repaired. Observed splash from the hand wash onto clean utensils and empty food containers stored on a dry storage rack next to the hand wash sink. The person in charge removed the utensils and food containers with splash from the hand wash sink to be washed and sanitized. The person in charge placed a plastic covering between the hand wash sink and storage rack to temporarily prevent further splash from the hand wash sink onto equiplent on the storage rack. Dicussed adding a splash guard to the hand wash sink or moving the storage rack away from the hand wash sink. Discussed storing utensils and food equipement to protect from sources of contamination. Corrective Action: Correct prior to next routine inspection.
