Inspector's notes

Observed cooked chilaquiles and gravy in walk-in cooler at 100 °F. Person in charge stated that foods had been placed in walk-in cooler around 2 hours prior. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Discussed importance of proper cooling methods (uncovering cooling foods, using shallow pans, using metal containers) with person in charge. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

The owner stated the establishment will remain temporarily closed during the construction. Construction is expected to be finalized mid December 2023 at which time the establishment will re-open to the public.
