Observed tomato sauce in steam table at 120 °F. Sauce had been placed in steam table four hours prior as per person in charge. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by person in charge at time of inspection. Corrective Action: Corrected at time of inspection.

Predefined Comment: Upon re-inspection, all violations due for correction have been corrected. Verified the walk-in cooler and prep cooler by the pizza oven both have ambient temperature between 38F - 39F as measured with inspector min max thermometer and are maintaining cold holding temperature of 41F or less. Confirmed establishment remained volutarily closed until re-inspection. Discussed obtaining refrigeration thermometors to be placed in all cooler storing TCS foods for temperature monitoring. Establishment now how sufficient cooling and cold holding capacities for normal operations. Re-inspection report delivered via email.

TCS food items included fresh cut tomatoes (49F) , canned anchovies (55F), and cooked pasta with deli meats (62F). The food items were embargoed at the time of inspection.

Observed spray bottles the yellow colored liquid and no label by the three compartment sink. The person in charge confirmed the spray bottles contained cleaning solutions and labeled them accordingly. Discussed working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Corrective Action: Corrected at time of inspection. 7-209.11 - Core: Storage-Other Personal Care Items Addl Notes: Observed medications, personal care items, and other personal items stored next to clean utensils, clean food equipment, over food storage and food prep areas. The person in charge removed all medications and personal items to be stored in a designated area away from food, food prep, and food equipment to protect from contamination. Corrective Action: Corrected at time of inspection.

7-102.11 - Priority Foundation: Common Name-Working Containers
Inspector's notes
Observed the walk-in cooler and the prep cooler by the pizza oven were not maintaining cold holding temperature. The walk-in cooler had an ambient temperature of 102.5F, the person in charge stated the walk-in cooler had stopped working earlier that morning and that all the food had been immediately removed and placed into other cold holding equipment. Observed the walk-in cooler was empty and not being used for storing any food at the time of inspection. The prep cooler by the pizza ovens had an ambient temperature of 53.7F, and the person in charge removed all TCS food items from the prep cooler at the time of inspection. Discussed with the person in charge not to use the walk-in cooler and the prep cooler for cold holding storage until equipment has been repaired and maintains TCS cold holding temperature of 41F or less. Re-inspection for walk-in cooler and prep cooler to take place in 24 hours. Corrective Action: Correct prior to re-inspection.
