Discussed with Person in Charge PIC when the items were made and PIC stated the cooked short ribs and green chilis were cooked at 9:30am and it was 10:30am at the time of the inspection. Discussed with PIC the internal temperature of temperature control for safety (TCS) for hot holding shall be 135*F or above. PIC reheated the cooked short ribs and roasted green chilis to 165*F for 15 seconds for hot holding. Correct By: Corrected At Time Of Inspection
