Observed greater than 500 ppm Quat sanitizer in the 3-compartment sink. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted by PIC to approved levels at time of inspection. Corrective Action: Corrected at time of inspection.

Observed build up occurring in the ice machine. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection. PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Addl Notes: Observed a floor cleaning chemical being used in lieu of a proper sanitizer in the 3-compartment sink. The owner brought Quat sanitizer while inspector onsite. The sanitizer then tested correctly. Quat sanitizer should be between 200-400 ppm to ensure the dishes are properly sanitized, and tested with a Quat testing strip.
