Observed freezer with an ambient temperature of 52°F filled with smoked fish with visible organic growth on five of the packages inspected. Operator voluntarily discarded the entire stock of items (50lbs) within the freezer during time of inspection. Ensure that all smoked products are kept at 41°F or less to prevent microbial growth. Also observed smoked stingray (20 lbs) and Dagaa fish (5lbs) on a shelf with evidence of insects present within the packaging.
