Predefined Comment: Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Predefined Comment: All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
Inspector's notes
Observed onion gravy, cooked chicken, cooked lamb, raw chicken, cooked spinach, cooked lentils, yogurt, milk, shredded cheese, raw eggs, and mango lassi in the walk-in refrigerator with internal temperatures between 46-51°F. According to PIC the walk-in refrigerator was temperature was raised at 12 PM to thaw a buildup of ice. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC moved all TCS foods to other refrigeration at time of inspection to rapidly cool. Discussed maintaining cold held TCS foods at 41°F or less even during defrost cycles. Corrective Action: Corrected at time of inspection.

Observed gravy cooling in plastic containers that bulk yogurt was packaged in. Per PIC, the buckets are washed, rinsed, and sanitized before reuse. Discussed with PIC that single service and single-use articles may not be reused. Containers originally designed for a one-time commercial purpose are not designed to be properly cleaned and sanitized for reuse. PIC was advised to obtain food grade safe (NSF) re-usable containers or use food grade safe liner. Corrective Action: Correct prior to next routine inspection.

Observed low boy cooler on the far end of the cook line with an ambient temperature of 52*F. The cooler contained raw chicken and shredded cheese. The chef stated that the product had been in the cooler for 1 hour prior to inspection. The person in charge had the chef move the product to the walk-in cooler to bring back down to temperature. Observed 10-15 gallon pot of onion sauce cooling in walk-in approximately 20 inches deep. Person in charge stated that the sauce was made 2 hours prior to inspection. Product measured 53*F with inspector probe thermometer. Person in charge instructed staff to move product into smaller containers for more efficient cooling. Discussed proper cooling methods including using ice wands, ice baths, portioning into shallow pans to allow for rapid cooling of the product. Correct By: Corrected At Time Of Inspection
