Inspector's notes

Observed gallons of milk, cold brew concentrate and ice cream base mix with internal temperatures as measured using a probe thermometer ranging from 45°F - 47°F in a reach-in refrigerator. A min-max was placed into the unit and allowed to stabilize for 15 minutes. The air temperature in the unit was holding steady at 45°F. According to the person in charge, the milk and other TCS foods had been in the unit for less than 4 hours and were moved to alternative functioning units. Discussed with person in charge to reach out to a technician to service the unit. The person in charge will reach out to a technician to service the unit. The establishment has sufficient cold holding capacity to operate safely. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed refrigerator at their food kiosk with ambient air temperature inside the unit holding steady at 45°F. Discussed with person in charge to hold TCS foods such as milk and cold brew concentrate in alternative functioning refrigerators. Other refrigerators they have were cold holding at 41°F or below. Person in charge will utilize these fridges until the refrigerator is repaired. Discussed with person in charge to seek out a technician to service the unit. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Person in charge reached out to a technician to service the unit. Corrective Action: Corrected at time of inspection.
