Observed prep refrigerator closest to the ice cream freezer, measuring with an ambient temperature of 54 degrees F. TCS items such as tomato juice, mayonnaise and shredded cabbage measured with internal temperature of 52 degrees F. Per PIC, these items had been stored in the fridge for approximately 2 hours and were placed in an alternative prep refrigerator for rapid cooling. The prep refrigerator will not used to store TCS food items until in good repair and able to maintain temperatures below 41 degrees F. Discussed cold holding.
