Inspector's notes
Observed lobster soup, chicken soup and mushroom soup at 109'F at the steam well on the server side of the cook line at the time of the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Soups had been placed and replenished in the steam since the lunch rush around 11am. Person in charge discarded soups at the time of the inspection. The steam well will be serviced, and all soup will come from the steam well on the cook line that is working effectively. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed 147*F in the hi temp, glassware, dish machine in the ware-washing area. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The PIC will use the main conveyor dish machine until this unit has been serviced by a technician. Corrective Action: Corrected at time of inspection.
