Inspector's notes

Observed tomato sauce in the serving line with an internal temperature ranging from 52-56*F when measured with a probe thermometer. According to person in charge, sauce had been prepped about 2 hours earlier and placed on the line. All prepped TCS (time and temperature controlled for safety) foods must be cooled to 41*F and below in the walk-in before being placed in cold holding units. Discussed refrigerating cans of sauce before prepping. Sauce was moved to freezer for rapid cooling at time of inspection. Corrective Action: Corrected at time of inspection.
