Observed 2 containers of salsa fresca (46*F) on the make-line, person in charge (PIC) placed in the unit at approximately 10:30 am, time of inspection was approximately 12:00 pm. PIC placed in a ice bath and put in refrigerator to rapid cool. Also, observed container of shrimp, salmon, mahi, pollock, and four bags of red onions in the walk-in cooler ranging from 48*F to 50*F. PIC stated items were in the walk-in for more than 24 hours and voluntarily discarded - see embargo form. Finally, four containers of mahi, four containers of shrimp ancho, shrimp, salmon, 2 containers of steak, salad, cabbage, two boxes of diced tomatoes, three boxes of bagged lettuce, three containers of salsa fresca, and four boxes of cheese blend in the walk-in ranging from 47*F to 65*F. PIC stated items were either delivered yesterday or prepared today. PIC relocated items to other refrigerators and freezers. Ambient temperature of walk-in was 50*F using min/max thermometer. PIC put a work order in on 6/28/25 for walk-in. Corrective Action: Corrected at time of inspection.
