Observed 7 packages of 500g "Inca" beef lard and 7 packages of 1kg "Inca" beef lard available for retail sale at time of inspection. Packages available with no inspection stamp. All food must be obtained from an approved source as defined by law. Items put on hold at time of inspection. "Inca" food product shall not be destroyed nor removed from the establishment. Provide receipts from product at time of re-inspection. Corrective Action: Correct prior to re-inspection. Hold of INCA product was verbally released to USDA inspector on day of re-inspection 9/9/25. Email received from USDA inspector on 9/10/25 stating 14 packages of unapproved INCA beef lard were voluntarily destroyed at time of inspection. Corrective action: Corrected at time of inspection.

All packaged food labels must include the following items: (1) the common name of the food, or absent a common name, an adequately descriptive identity statement; (2) If made from two or more ingredients, a list of ingredients and sub-ingredients in descending order of predominance by weight, including a declaration of artificial colors, artificial flavors and chemical preservatives, if contained in the food; (3) an accurate declaration of the net quantity of contents; (4) the name and place of business of the manufacturer, packer, or distributor; (5) the name of the food source for each major food allergen contained in the food unless the food source is already part of the common or usual name of the respective ingredient; (6) in English. Observed mole, many candies in isles, and snacks near cash register with manufacturing and nutrition information offered in only Spanish. All packaged food labels must include the following items: (1) the common name of the food, or absent a common name, an adequately descriptive identity statement; (2) If made from two or more ingredients, a list of ingredients and sub-ingredients in descending order of predominance by weight, including a declaration of artificial colors, artificial flavors and chemical preservatives, if contained in the food; (3) an accurate declaration of the net quantity of contents; (4) the name and place of business of the manufacturer, packer, or distributor; (5) the name of the food source for each major food allergen contained in the food unless the food source is already part of the common or usual name of the respective ingredient; (6) except as exempted in the Federal Food, Drug, and Cosmetic Act § 403(q)(3) -(5), nutrition labeling as specified in 21 CFR 101 -Food Labeling and 9 CFR 317 Subpart B Nutrition Labeling; and (7) for any salmonid fish containing canthaxanthin or astaxanthin as a color additive, the labeling of the bulk fish container, including a list of ingredients, displayed on the retail container or by other written means, such as a counter card, that discloses the use of canthaxanthin or astaxanthin. Label on food package shall be offered in English. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed packaged wheels of cincho cheese for retail sale in retail cold-holding unit. Label on package states it is distributed by Xochipala Dolar Y Mas LLC, who does not possess a Food Processor permit and is not permitted to package food items, making the cincho cheese an item from an unapproved source. Person in charge (PIC) removed cheese from unit. Observed plastic bag packaged unlabeled Oaxaca cheese in same retail cold-holding unit. Person in charge (PIC) provided labels, stating cheese is made in Mexico, but could not provide additional documents. Discussed with PIC that documents, such as invoices, are needed to verify if cheese is from an approved source. PIC removed cheese from unit until source is verified. Re-inspection for approved source for Oaxaca cheese is scheduled for 10/18/2024.
