Observed warewashing taking place with quat sanitizer with a concentration of 0-100ppm. Sanitizer supply for on-site generation was low. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Person in charge (PIC) provided more quat sanitizer at time of inspection. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed chicken and rice soup in hot holding container/ steam well with internal temperatures of 111*F to 120*F. Person in charge (PIC) stated that soup was reheated and placed there almost 2 hours prior. Steam well was low on water and PIC placed more water in container. Soup was reheated to 165*F and replaced in steam well. Discussed with PIC that hot time/ temperature control for safety foods (TCS) such as chicken and rice soup must be held at 135*F or above.
