The ground meat chilli in question has been brought out from the walk-in and placed into the hot-holding unit at 8am, per PIC. Hot-holding TCS food must be held at 135'F or above at all times. Foods must be rapidly reheated to 165'F prior to hot holding. The chilli was reheated to 165'F an electric stove and placed into the hot-holding unit at time of inspection.
