Notified Person In Charge (PIC). At time of inspection all chicken was 104*F-118*F with inspector and establishment thermometers. Directed employee to discard all improperly hot holding chicken fillets. =======Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. ====2nd Consecutive violation.
