Inspector's notes

Observed cooked chicken, liquid eggs, liquid egg whites, and turkey patties in the reach in cold holding unit on the cook line with temperatures between 48-58*F, per PIC had been placed into the unit 3 hours prior. Ambient air temperature of the unit was 53*F with a min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Per PIC, product was cooked the day before and the unit was not checked on the line check the morning of 1/8/2024. PIC discarded all bags of cooked chicken at time of inspection. The person in charge stated the items had be placed into the low boy from the walk in cooler at 9:00 am, three hours ago, and provided a temperature check log for the low boy cooler with a recorded internal ambient temperature of 38F at 8:30 am. The person in charge moved the food items back into the walk in cooler to cool at the time of inspection and stated a work order would be placed for the unit. Observed mixed cream cheese containers (veggies and fruit) with an internal temperature of 53F in the display case near the front register. The person in charge stated the cream cheese had been brought out from the walk in cooler and placed into the case at 8:30 am, 3.5 hours ago. The person in charge moved all the cream cheese containers to the freezer for cooling at the time of inspection.
