Inspector's notes

Observed yellowtail tuna, white tuna, regular tuna, salmon, crab, cream cheese, cooked shrimp, and scallops with temperatures between 45-57*F, per PIC had been placed into the sushi cases at 2pm. Ambient air temperature taken with a min/max thermometer of the sushi cases was 65*F, 73*F, 66*F, and 57*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection, they were not embargoed due to being placed into the sushi cases within 4 hours. Corrective Action: Corrected at time of inspection.

Observed the ambient air temperature taken with a min/max thermometer of the sushi cases on the north side of the sushi line to be 65*F and 73*F, and on the south side of the sushi line to be 66*F and 57*F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. In person reinspection is scheduled for Tuesday, August 4th. Corrective Action: Correct prior to re-inspection.
