Person in charge (PIC) was not sure where they were. Test strips were found near the walk-in cooler at time of inspection. Please ensure all employees are able to find the test strips for both chlorine and quat at all times. Test strips should be used when sanitizer is used at the three-compartment sink, the ware wash machine, and for sanitizer buckets.Also discussed ordering larger gloves for employees. Observed an employee struggling to don gloves. This could cause tears or other points of contamination.

There was no Certified Food Protection Manager (CFPM) on duty at time of inspection. A CFPM is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

Observed employee don gloves between tasks without washing hands first. Inspector asked employee to remove gloves, wash hands, and then don new gloves at time of inspection. Discussed with Person-in-Charge (PIC) that hands must be cleaned prior to donning glove to reduce risk of contamination. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.
