Inspector's notes

Observed oysters and clams in seafood display case with no shellstock tags with the product. Shellstock tags were found in record keeping book. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Also observed no date when the last Shellstock was sold or served recorded on the tag in the notebook record keeping system of at least two shellstock tags at the time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff (a verification breakdown), which resulted in the violation. Discussed importance of shellstock tag record keeping at the time of inspection. Corrective Action: Corrected at time of inspection.

Record the received date on each tag itself, then when the batch is sold, the date of last sale must be recorded on the tag itself. Retain tags for a minimum of 90 days.
