Observed cooked onions cooling down at room temperature inside a pot lined with newspaper to wick excess moisture from the onions. In addition, observed jalapenos directly stored in "to-go" plastic grocery bags inside the walk-in refrigerator. The establishment shall store/hold food items in food-grade containers to prevent the migration of deleterious materials (e.g. inks, dyes, plasticizers) to food. The manager removed the jalapenos from the grocery bag and discarded the cooked onions directly contacting newspaper at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked chicken with an internal temperature of 100 degrees F cooling in the walk-in cooler. Spoke with PIC and they stated that the chicken was cooked at 8:30am and started cooling at 9:30am (approximately 4 hours before inspectors arrival.) All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
