Observed several ladles and tongs stored as clean on a metal rack adjacent to the 3-comp sink with sticky residue and visible dried food debris on the food-contact surfaces at time of inspection. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.

PIC stated that machine worked earlier when they tested. However, it tested at 0 ppm after final rinse and PIC was not able to prime the machine due to a broken display screen** PIC submitted a work order and stated that they will sanitize all dishes at the 3 compartment sink in a quat solution**

All compartments were empty while employee used running water and a rag to clean the equipment. The proper cleaning procedure should be a wash with soap, rinse in rinse compartment and sanitize in a quat solution before air drying. Equipment has be submerged in sanitizer for a minimum of 20 sec. Informed person in charge about proper cleaning procedures and the equipment that was improperly washed was put in dish rack to be sent to dish machine. Dishwasher sanitizer measured between 50-100 ppm and the quat dispenser was dispensing sanitizer between 200-400ppm and test strips were available and easily accessible.
