Inspector's notes

Observed enchilada sauce being cooled in a covered container with a depth of more than 8 inches. As per owner, sauce was prepared and heated on stove top less than two hours before temperature was taken. Product was still at 130*F - 133*F. Product was placed in ice bath to cool to 41*F. Provided cooling chart to assist with cooling practices. Corrective Action: Corrected at time of inspection.
