Observed quat sanitizer from 3-component sink dispensing at ~500ppm. Observed sanitizers in sanitizer buckets between 400-500ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Discussed ensuring that all personnel are routinely checking the concentration of the sanitizer and ensuring that sanitizer is properly diluted into range until dispenser is adjusted. All sanitizer in the facility was adjusted to specification. Corrective Action: Corrected at time of inspection.

Observed bags of soup at the bottom of the standing refrigerator near food preparation and grill area with an internal ambient temperature of 53-55*F. Per employee, soups were placed into standing refrigerator from walk-in about 5 hours prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed a large build-up of ice on the compressor, and the internal ambient temperature was measured to be 54.5*F via min-max thermometer. Discussed defrosting the refrigerator or calling in a technician and marking the unit out-of-service until cooling capacity is restored. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were voluntarily discarded by the manager at time of inspection and manager posted an out-of-service sign. Corrective Action: Corrected at time of inspection.
