Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Person in charge states these foods were placed in the unit from the walk in cooler 3 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit or placed in an ice bath to rapidly cool to 41°F at time of inspection. PIC stated raw meat items were stocked in low boy unit at 7am, less than 4 hours prior. Other TCS items have been kept overnight, per PIC. PIC could not provide temperature logs stating unit was in temperature less than 4 hours prior. All TCS foods improperly cold held were discarded (see embargo list) by PIC at time of inspection. Observed butter (55-75'F) stored at ambient temperature in kitchen. Suggested adding butter to establishment's time as control policy since it suits their operations and needs. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Ambient temperature of low-boy unit in question observed at 48.9'F.
