Observed a heavy accumulation of food debris, grease deposits, and organic matter on the metal racks inside the walk-in cooler used to dry pork skin. Per PIC, the last time they were washed was on Sunday, 4 days prior to inspection. Discussed cleaning frequency of food contact surfaces with PIC. All food-contact surfaces within a walk-in cooler maintaining temperatures of 41'F or below that contact TCS foods must be cleaned every day by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
