#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed sliced tomatoes/60°F, arugula/60°F, sliced ham/59°F, microgreens/54°F, sliced cheese/54°F, and unpasteurized raw shelled eggs/58-74°F stored in a malfunctioning prep refrigerator. Observed cooked hashbrowns/64°F and butter/70°F held at room temperature on counter and shelf near the grill. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the chef and PIC it was determined the eggs had been stored above 45°F for more than 4 hours. According to the PIC all other TCS foods were removed from the functioning reach in refrigerator within the last 4 hours. The shelled eggs were discarded at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.
