Observed excessive organic matter build up inside the ice machine. Discussed with the person in charge that the cleaning frequency should be increased to preclude the accumulation of soil and mold. Corrective Action: Correct prior to next routine inspection. PRIORITY VIOLATION-4-501.114 (F1-2) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- On-site Generation. Addl Notes: Observed low temperature chemical dish machine that tested 0ppm with chlorine test strips. After several attempts to prime machine it was discovered that a hose had broke off. The person in charge called for service at time of inspection. Instructed staff to use 3 compartment sink until repairs can be made. Discussed with Chef that a chemical dish machine should test between 50-100ppm. Corrective Action: Corrected at time of inspection.
