No employee with supervisory and management responsibility with the authority to direct and control food preparation that is deemed a certified food protection manager (CFPM) was present at time of inspection. According to the PIC one of the establishment's CFPM will be onsite later this afternoon. A CFPM is required to be onsite during the hours of operation. Discussed CFPM variance: https://www.maricopa.gov/FormCenter/Environmental-Services-16/Variance-for-Certified-Food-Protection-M-323. Ensure CFPM is present and certification is available for review. Corrective Action: Correct prior to next routine inspection.
