Inspector's notes

Observed prep fridge to improperly cold hold burrata cheese (58*F), pork belly (50.5*F), butter (52*F), blue cheese (53*F), and feta cheese (54*F). These items had been in the unit for longer than 4 hours according to the chef. All TCS foods improperly cold held for more than 4 hours were discarded by PIC at time of inspection. Observed cooked pinto beans (53*F), hummus (53*F), and cooked pasta (56*F) improperly cold held. Upon questioning, these items had been placed in the unit less than 3 hours ago. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit or put on ice to rapidly cool to 41°F at time of inspection. Chef will have TCS/ RTE foods on 4 hour time as a control and on ice until unit is fixed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
